Falmet is known locally for her innovative and sustainable approach to winemaking, using only organic and biodynamic grapes which enable her to in turn produce top quality wines.
This classic house cuvee is made from a blend of Pinot Noir, Chardonnay, and reserve wines from previous vintages to give extra complexity and character. The wine undergoes a meticulous vinification process that includes fermentation in stainless steel tanks followed by aging in oak barrels and a secondary fermentation in the bottle. Nathalie then adds a very low dosage to add a touch of smoothness.
The result is a bright and bubbly Champagne with a fine and persistent mousse and a complex bouquet of floral, citrus fruit and lightly toasted notes. It’s a versatile wine that pairs well with a wide range of foods including fresh seafood, poultry, and soft cheeses. Serve chilled. Nathalie Falmet is based in the Aube region of Champagne and has been making wine for her namesake boutique Champagne house since 1999. Falmet is known for her innovative and sustainable approach to winemaking.
She uses only organic and biodynamic grapes, and her vineyards are carefully tended to produce grapes of exceptional quality. She is also committed to low-intervention winemaking techniques that allow the natural flavors and aromas of the grapes to shine through. This signature Blanc de Noir Brut is a blend of Pinot Noir and Pinot Meunier grapes from the Le Val Cornet vineyard which are carefully selected at optimum ripeness and harvested by hand.
The grapes are then fermented in stainless steel tanks and aged in oak barrels before undergoing a secondary fermentation in the bottle. In the glass you can expect a beautiful golden color with a fine and persistent stream of bubbles. On the nose the Champagne has a complex bouquet of citrus, apple, and white floral notes with hints of toasted bread and honey, while on the palate it is fresh, vibrant, and well-balanced with a long and satisfying finish.

Serve chilled. Talented winemaker Nathalie Fermet has been making her own wines since 1999 in the Aube region of Champagne. Over the years she’s earned a cult following for her delicious, artisanal bubbly and her commitment to sustainable and environmentally-friendly winemaking.
All of her wines are crafted from organic and biodynamic grapes, while in the winery she prefers a minimal intervention approach to highlight the natural character of the fruit and the terroir. This unusual cuvee is named Terra in reference to its unique production method. Nathalie uses clay amphorae to ferment the base wine which is made from 100% Chardonnay grapes grown on exceptional Kimmeridgian clay-limestone soils.
This process helps to preserve the vibrant personality of the Chardonnay as well as the minerally and elegant influence of the terroir. After the initial fermentation the Champagne is allowed to ferment and mature in the bottle. The result is a well-balanced and complex Champagne, with layers of flavors and aromas that evolve over time and a distinctive verve and grace.
Expect hints of fresh white flowers and zingy citrus mingling with riper notes of orchard fruit and a flinty note on the long finish.
