
Sparkling French Champagne Andre Beaufort Polisy Blanc de Blancs 2018 wine
Located in Ambonnay, the Champagne House Andre Beaufort has been cultivating its vineyards organically and using homeopathic and aromatherapy remedies since the 1970s. Today, the estate, which extends over approximately 6 hectares of vineyards, is managed by Andre and his son. A special feature of the estate: disgorging is always done traditionally “a la volee”.
Andre Beaufort’s Polisy Blanc de Blancs Millesime is made with Chardonnay from the village of the same name located in the Cote Des Bar, about 40 km southeast of Troyes. Here, the vines are influenced by the climatic conditions of the Langres plateau, with cold and humid currents, while the soil is clayey from the Kimmeridgian and more difficult to work. This elegant champagne reveals a straw yellow color with golden reflections brightened by a fine and persistent perlage.
Its aromatic profile is fragrant and fresh with fruity notes of citrus and white flowers, followed by hints of brioche and bread crust. On the palate, it is fresh and balanced, with a creamy texture and a marked acidity. It is lively and mineral with a long finish that recalls pastry notes.

The Andre Beaufort winery was founded in 1969 and produces Champagne from organic grapes grown on six and a half hectares of vineyards that are distributed between Ambonnay and Polisy, in the Aube department. In addition to organic cultivation, the winery practices homeopathy and aromatherapy techniques to combat fungal diseases and minimize the use of copper and sulfur. The Champagne Brut Reserve Polisy by Andre Beaufort is produced with Pinot Noir and Chardonnay grapes from organically grown vineyards located in the Cote des Bars, on clayey soils.

No need to decant, serve slightly chilled. Andre Chemin winery was founded in 1948 in the village of Sacy, Champagne. It is still under the guidance of the Chemin family, currently Sebastian Chemin and his wife Eva.
After three generations, the family have developed an extraordinary skill for creating fine sparkling wines, producing a brilliant range of Champagne, mostly from the Pinot Noir fruit. Although this grape is famously difficult, it thrives under the delicate touch of these experienced wine-makers, and in the mountainous terroir of Reims. The area surrounding Sacy village is one of Champagne’s few Premier Crus.
The “Cuvee Selectionee” is composed of 80% Pinot Noir and 20% Chardonnay, sourced from 6.5 hectares of premium land. It is a deep blonde colour, with hints of gold. On the nose, you will discover plenty of floral notes, wild strawberries and subtle spices, giving way to aromas of fresh brioche.
Its bubbles are velvety smooth, but it maintains a fine acidity which gives a pleasant bite to the palate. Look for flavours of yellow apple, citrus fruits, toasted bread and whipped cream. The Cuvee Selectionee is perfect for any occasion, and we recommend pairing it with fried chicken, sushi, or smoked salmon on a wholegrain cracker.

Rose French Champagne Andre Chemin Lightbreaker Rose Brut wine
No need to decant, serve slightly chilled. Andre Chemin winery is one of Champagne’s finest, a family-owned establishment with over 70 years of experience to draw from. It was founded in 1948 by Andre Chemin himself and is now led by third-generation wine-maker Sebastian and his wife Eva.
Founder Andre Chemin was born and raised in Sacy, a village with mountainous terroir just a few kilometres south of Reims. This is one of the few Champagne communes that have been awarded the title of Premier Cru, a model example of what Champagne wines should taste like. This Brut Rose is mostly made of Pinot Noir, with a splash of Chardonnay and Coteau Champenois, a still wine that adds a certain flourish to the delicious blend.
It exhibits an intensely floral nose, packed with notes of white and pink flowers that eventually give way to scents of strawberry and raspberry. It’s a distinctly summery drink, bright and lively with a creamy, effervescent mouthfeel. Its flavours are driven by crisp red fruits.
Red cherries and wild strawberries are evident, along with citrus elements and hints of whipped cream. It will be excellent as an aperitif, but this wine also has plenty of body. It can be paired with lobster, and salmon steaks, and will even stand up to a tender lamb chop.
